Ingredients:

  • For this recipe for chicken rolls with mushrooms, you will need 4 chicken fillets (120g0 each, 200ml of dry white wine, 1 clove of garlic, salt and freshly ground black pepper to taste, 3 tablespoons of olive oil for frying.
  • Filling: 100 g arugula, 250 g champignons, 1 tbsp. l. chopped dill, salt to taste, 1 tbsp. l. olive oil for frying. Garnish: 2 carrots, 50 g butter for frying.
  • Sauce: 200 ml of water, 1 tsp. starch.
  • Additionally: culinary thread, foil.

Preparation:

Before preparing chicken rolls, you need to wash and dry the breasts, cut into layers, beat off with a kitchen hammer, salt and pepper. Wash, dry and peel the mushrooms, cut into slices, fry in a dry skillet under the lid. Add olive oil and chopped dill after 5 minutes. Season with salt, fry for another 5 minutes.

Put arugula and mushrooms with dill on the fillet, roll up the rolls, tie with a thread. Fry chopped peeled garlic in olive oil until golden brown, remove from the pan. Put the rolls, fry until golden brown. Pour in wine, simmer for 20 minutes, turning over. Cover the rolls with foil, put in a warm place.

Prepare the sauce: dilute the starch with water, pour into the pan, where the rolls were stewed, let it boil for 2-3 minutes. Cut the peeled carrots into cubes, sauté in butter for 15 minutes.

Pork rolls with mushrooms and eggs

Ingredients:

  • 600 g pork loin, 20 g flour for breading, 60 ml olive oil for frying.
  • Filling: 200 g of mushrooms, 200 g of onions, 1 egg, salt and freshly ground black pepper to taste, 30 ml of olive oil for frying.
  • For filing: a few sprigs of dill and / or parsley.

Preparation:

First, for the pork rolls with mushrooms according to this recipe, you need to prepare the filling. Boil an egg (7 minutes after boiling water). Cool, peel, chop finely. Wash, dry and peel the mushrooms, cut into thin slices. Cut the peeled onion into strips or half rings. Fry onions and mushrooms in heated olive oil for 2-3 minutes. Mix with chopped egg, salt and pepper.

Roll out the dough into a circle on a floured surface. Spread the filling on top, roll it up, brush the edge of the dough with water. Cut the roll into pieces 1-1.5 cm thick, put in a fireproof dish.
