Barley with porcini mushrooms: cooking recipes

Barley is one of the most famous cereals, but few people prefer it. It's just that not everyone can cook it correctly, hence the reluctance to eat such porridge. Regular consumption of barley strengthens the immune system, as well as normalizes the state of the cardiovascular and nervous systems. And if you combine barley with meat or mushrooms, then even the most capricious gourmets will not refuse such a dish. So, we offer 2 recipes for making pearl barley with porcini mushrooms.

Barley with dried porcini mushrooms in a saucepan

  • Dried porcini mushrooms - 100-150 g;
  • Pearl barley - 2 tbsp.;
  • Water for boiling cereals - 4 tbsp.;
  • Bow - 1 head;
  • Vegetable oil;
  • Salt and pepper to taste.

Barley with dried porcini mushrooms is prepared in the following way:

Pour boiling water over the mushrooms and leave until they swell for about a few hours, boil for 10 minutes, strain the broth.

Rinse with running water, pat dry with a kitchen towel and cut into slices.

Sort the barley and rinse several times, transfer to a sieve or colander.

Boil some water in a saucepan and place a sieve with barley there.

Cover and simmer over medium heat for 20 minutes.

Then in another saucepan, heat the water from the recipe, add a pinch of salt and 1 tbsp. l. vegetable oil.

Send porridge there and simmer for 25 minutes.

Fry the diced onion and mushrooms in vegetable oil until tender.

Add frying to the porridge, pour in the strained broth, stir and simmer over low heat for another 35 minutes.

Season with salt and pepper to taste.

Barley with fresh porcini mushrooms in a slow cooker

Barley with porcini mushrooms in a slow cooker is a tasty and healthy dish, which, moreover, is easy to prepare.

  • Fresh mushrooms - 0.7 kg;
  • Pearl barley - 1.5 tbsp.;
  • Onions - 1 pc.;
  • Purified water - 4-5 tbsp.;
  • Butter;
  • Salt, pepper, favorite spices.

Barley with porcini mushrooms will be prepared in stages:

  1. Soak the pearl barley in water for about 4 hours.
  2. Cut the onion and prepared mushrooms into medium cubes or slices.
  3. We immerse them together with 1-2 tbsp. l. butter in the multicooker bowl and set the "Cooking" mode for 20 minutes.
  4. For 5 minutes, open the lid, salt and season with spices to taste.
  5. Add barley, fill with water from the recipe, mix and set for 1 hour in the "Pilaf" mode.
  6. After the sound signal, let the porridge stand for 1-1.5 hours and serve it to the table.
