How to cook lean cabbage soup with mushrooms and sauerkraut

We need:

  • 200 g sauerkraut;
  • 5 potatoes;
  • 2.5 liters of filtered water;
  • 1 carrot;
  • 2 onions;
  • 3 tbsp. l. vegetable oil;
  • 1.5 tbsp. l. wheat flour;
  • 2 cloves of garlic;
  • 2 bay leaves;
  • black pepper (peas);
  • 0.5 tsp paprika;
  • a bunch of any greenery;
  • a pinch of salt.

Squeeze the cabbage with your hands from the juice, but do not pour out the liquid. Pour 1 liter of water over the cabbage, send it to the stove and simmer for about 1 hour over low heat.

Cut the potatoes into cubes and combine with cabbage. Add remaining water and cook until half cooked.

Grate the carrots and fry in a pan until tender, then send to the potatoes.

Put finely chopped onions in a pan, add sunflower oil, 50 ml of water and simmer for 10 minutes.

Dilute flour with 3 tbsp. l. broth, break up the lumps and pour into the cabbage soup.

Send the stewed onions to a saucepan, then pour paprika, salt, pepper, stir well and let it boil for 20 minutes.

If the acidity is low, add the juice from the sauerkraut directly to the saucepan. Put the bay leaf, finely chopped garlic cloves. Boil over low heat for 10 minutes, turn off the stove and let the cabbage soup brew.

How else to cook lean cabbage soup with mushrooms so that they are tasty and healthy? In this case, many people use a product such as beans. And if you take canned beans, then this will significantly save time and effort.

To quickly cook lean cabbage soup with mushrooms and beans, you need to take:

  • 5 pieces. potatoes;
  • 1 can of canned beans;
  • 1 carrot;
  • 2 onions;
  • 1 stalk of celery
  • 400 g fresh champignons;
  • 3.5 liters of water;
  • 5 tbsp. l. sunflower oil;
  • 3 pcs. black and allspice pepper;
  • basil leaves;
  • salt to taste.

Wash the peeled potatoes, cut into strips, fry in a pan for 15 minutes.

Bring the water in a saucepan to a boil and put the fried potatoes there, cook for 15 minutes.

Grate celery and carrots, finely chop the onion. Grind all these vegetables with a blender in mashed potatoes. Fry the mixture in a frying pan where the potatoes were fried for 10-15 minutes. Throw everything into a saucepan, including chopped champignons, let it boil for 10 minutes.

  • 400 g sauerkraut;
  • 10 pieces. dry mushrooms;
  • 2 tbsp. l. buckwheat cereals;
  • 2 pcs. onions;
  • 2 pcs. potatoes;
  • 1 carrot;
  • dill greens;
  • 1 bay leaf;
  • 4 cloves of garlic;
  • 3 pcs. allspice and black pepper;
  • 3 tbsp. l. sunflower oil;
  • 0.5 tsp dill seeds;
  • a pinch of coriander;
  • salt.

Mushrooms need to be soaked in advance and cooked from them 2 liters of broth.

Put the sauerkraut in a clay container, fill with 500 ml of boiling water and put in the oven, preheated to 140 °, for half an hour. Then pour the cabbage broth into another bowl.

Add dill and coriander seeds to a frying pan in oil, heat for 3-5 minutes, but do not fry. Chill the oil, choose the seasonings and discard. Mix oil with cabbage and chopped onions.

Pour buckwheat, small cubed potatoes and carrots into the hot broth with mushrooms, boil for 30 minutes.
