To prepare the pancake dough in water, you will need the following ingredients:

  • 0.5 l of pasteurized milk;
  • chicken eggs 1-2 pieces;
  • 4 tbsp. tablespoons of wheat flour (with a slide);
  • 30-50 g butter for lubrication;
  • 2 tbsp. tablespoons of refined vegetable oil;
  • a piece of bacon;
  • salt and sugar to taste.

The dough can be prepared either by hand or with the help of kitchen helpers such as a blender. First, put eggs, salt and sugar in a bowl or blender bowl and beat everything well. Then add the warmed milk and sifted flour to the container. Beat all ingredients well until a homogeneous air mass without lumps is formed and add vegetable oil.

Before pouring in each new portion of pancake dough, the pan should be greased with a piece of bacon or vegetable oil (using a brush). Fry each pancake on both sides and, after removing it onto a plate, coat one top side with butter. Pancakes made from such dough are very tasty and aromatic by themselves. They can be eaten without filling, only then the amount of added sugar should be equal to 1 tbsp. spoon and besides it, you need to add vanillin to the dough at the tip of a knife.

Pancakes stuffed with meat and mushrooms, cooked on kefir dough are very tasty and fluffy. Pancake dough based on kefir is very easy to prepare, if everything is done in accordance with the recipe, then the finished products are thin and delicate.

To prepare a dough on kefir, you will need the following products:

  • 1 liter of kefir 2.5% or 1% (to taste);
  • 1 teaspoon of sugar and the same amount of salt;
  • 250 g wheat flour (sifted);
  • 80 g starch;
  • 1 g baking soda
  • 1-2 eggs;
  • 30 ml of vegetable oil.

First you need to mix kefir, egg, salt and sugar in a bowl. In a separate container, mix flour and starch until smooth. Add this dry mass to the resulting mixture of kefir and eggs and mix everything well. After that, add soda, mix again and add vegetable oil to the mixture.

The resulting pancake dough should turn out to be quite liquid, but do not be afraid that the pancakes will not move well from the pan and tear. Due to the presence of such components as starch and vegetable oil in the dough, they will simply "jump" out of the pan without any effort. Too thick dough must be diluted with kefir. Pour pancakes into a preheated pan in an even layer, brown until golden brown.

Choux pastry recipe

To prepare them, you will need the following components:

  • 500 ml of kefir 2.5% fat;
  • 1-2 eggs;
  • 1 tbsp. milk;
  • 350-400 g flour;
  • 0.5 tsp salt;
  • 1 teaspoon of baking soda and the same amount of sugar;
  • 1-2 tbsp. tablespoons of vegetable oil.

Heat kefir to a temperature of 40 degrees (so that it is a little hotter than body temperature), displace it with all components except milk and vegetable oil. Boil the milk and pour it into the mixture in a thin stream with constant stirring, mix thoroughly and add vegetable oil.

Preparation of filling for pancakes with meat and mushrooms

To prepare delicious filling for pancakes with meat and mushrooms, you need to use only fresh products so that they do not quickly deteriorate during storage of the finished pancakes. You can use different types of meat and mushrooms to your taste.

Pancakes stuffed with beef and mushrooms are very satisfying and tasty. To prepare it, you will need the following ingredients:

  • 300 g lean beef or veal;
  • 250-300 g of mushrooms;
  • 2 heads of white onions;
  • vegetable oil for stewing and frying;
  • black pepper and salt to taste.

The meat must be prepared in advance, it should be washed, boiled in salted water, cooled and minced. Wash the mushrooms, dry, cut into slices, put in a preheated pan with vegetable oil. Peel the onion, cut into thin half rings, send to the mushrooms. Cool the onion with mushrooms and also mince it. Pepper and salt the resulting mass to taste.

Pancakes stuffed with chicken and mushrooms

To prepare it you will need:

  • 350 g chicken fillet;
  • 200 g of mushrooms;
  • onion head;
  • half sweet pepper;
  • 50 g butter;
  • vegetable oil for frying;
  • pepper and salt to taste.

Wash the chicken fillet, boil and cool. Peel the onion, cut into cubes and sauté in hot vegetable oil in a frying pan until transparent. Rinse the mushrooms, dry, chop finely and send to the onion, add butter, simmer until tender. Twist the cooled meat and onion-mushroom mixture in a meat grinder and mix until smooth, add salt if necessary.
