Fried caps of fresh champignons in oil.

Ingredients:

  • 600 g fresh champignon caps
  • 3-4 st. tablespoons of vegetable oil
  • 4-5 Art. tablespoons of flour
  • salt
  • pepper

Peel, rinse, dry fresh mushrooms on a napkin or towel. Cut off the mushroom legs.

Heat the vegetable oil well in a frying pan, dip whole mushroom caps into it.

Fry first on one side, then on the other, trying to brown them.

Put the prepared mushrooms on a dish and salt.

Champignon caps fried in oil can be served with new potatoes or other vegetable dishes.

Deep-fried champignons.

Ingredients:

  • 500 g fresh champignons
  • 80 g flour
  • 1 egg
  • 125 ml milk
  • 1 tsp sugar
  • vegetable oil
  • salt to taste
  1. Peel the mushrooms, cut off the legs, and rinse the caps and boil in a little water. Then remove them from the broth and dry. (Use the broth and mushroom legs for cooking other dishes.)
  2. Prepare the batter: pour flour into a bowl, add an egg, salt, sugar, pour in milk and stir everything well.
  3. Pour oil into a deep frying pan (or deep fryer) and heat well over high heat. When it warms up, reduce the heat to minimum.
  4. Dip boiled mushroom caps in batter and dip in boiling oil. Put the fried mushrooms in a plate and let the oil drain.
  5. Before frying the mushrooms, check if the oil is hot enough. To do this, you can throw a piece of mushroom into the oil, and if there is no strong foaming, the deep fat is warmed up well.

Fresh champignons, fried in butter.

Ingredients:

  • 800 g fresh champignons
  • 3 onions
  • 100 g butter
  • 1 tbsp. a spoonful of flour
  • 1 tbsp. a spoonful of chopped greens

Peel the champignons, rinse under running water, salt. Finely chop the onion. Melt butter in a frying pan, fry onions and mushrooms in it. When they are ready, add flour, add water (or broth) and simmer a little more over the fire.

Before serving, the mushrooms, fried in butter, sprinkle with chopped herbs.

Champignons in oil for the winter.

Ingredients:

  • Champignons - 2 kg
  • Butter (ghee) - 150 - 180 g for frying + 50 - 70 g for pouring
  • Salt to taste

Medium-sized mushrooms are suitable for harvesting without any spots and damage. Rinse the mushrooms thoroughly under running water. Melt the butter in a frying pan, fry the chopped mushrooms. It is not recommended to cover the mushrooms with a lid during frying in order to avoid the appearance of excess liquid. You need to fry the mushrooms until fully cooked, stirring constantly so that they do not burn. When the mushrooms are almost ready, 5 minutes before turning off the heat, add butter to them so that they are completely in oil when laying.

Put ready-made mushrooms in sterilized jars, tamp them thoroughly using a culinary spatula or a tablespoon.

Pour the mushrooms on top with melted butter in advance, let them cool slightly. Put the mushrooms in oil, fried for the winter, in jars, close the lids and wrap them in a blanket.

Pickled champignons in oil.

Ingredients:

  • 200 g champignons (pickled)
  • 3 onions
  • 50 ml vegetable oil
  • 1 bunch of dill
  • pepper

Peel the onion, wash and cut into rings. Wash the dill greens.Cut the pickled mushrooms into slices, put on a dish, put onion on top, pepper, pour over with vegetable oil. Decorate marinated champignons in oil with dill and serve.

Mushrooms fried in breadcrumbs (Hungarian).

Ingredients:

  • 7-8 champignons
  • 1 egg
  • 2 tbsp. tablespoons of vegetable oil
  • 2 tbsp. tablespoons of crushed crackers
  • salt to taste

Cook the prepared mushrooms in salted water for 10 minutes and discard them in a colander. Then add salt, dip the mushrooms first in a beaten egg, and then breaded in crushed breadcrumbs and fry in oil.

Recipe for canned champignons fried in oil and sour cream

Ingredients:

  • 500 g canned mushrooms
  • 120-180 ml fill
  • 3-4 st. tablespoons of butter
  • 250 g sour cream
  • 1 onion
  • greens

Peel the mushrooms, rinse, cut into plates, add the filling, butter and fry for 5 minutes. Then stir in sour cream and chopped onion fried with butter and heat. Serve hot, garnish with parsley or dill. Serve stewed carrots and boiled cauliflower as a side dish for canned mushrooms fried in oil according to this recipe.

Champignon mushrooms in oil and vinegar

Herring with pickled mushrooms with oil and vinegar.

Ingredients:

  • pickled champignons - 300 g
  • herring - 2 pcs.
  • onions - 2-3 pcs.
  • chopped green onions - 2-3 tbsp. spoons
  • vegetable oil - 1-2 tbsp. spoons
  • vinegar
  • salt
  • mustard

Peel the herring, cut off the heads, separate the fillets from the bones. Put coarsely chopped fillets in a herring pot, pour over with vegetable oil, vinegar mixed with mustard, and garnish with onion rings. Put the diced pickled mushrooms on both sides of the herring in oil and vinegar.

Salad with mushrooms, doused with marinade, in vegetable oil.

Ingredients:

  • 5 kg of champignons
  • 1/2 cup vinegar
  • 2 tbsp. l. Sahara
  • 2 tsp salt
  • 1-2 tsp mustard
  • 1/2 cup vegetable oil
  • a few peas of black pepper
  • Bay leaf

Peel the mushrooms from the ground, thinly cut the skin off them, separating the cap from the stem, rinse, cut into cubes and boil for 20 minutes. in salted water, then drain well and cool. Prepare a marinade from vinegar, mustard, ground black pepper with the addition of sugar and salt. When the sugar is completely dissolved, pour the marinade over the mushrooms. Crumble a bay leaf on top. After standing for 2 hours, sprinkle the salad with vegetable oil and serve.

Champignons fried in olive oil with onions

Ingredients:

  • 1 kg fresh champignons
  • 100 ml olive oil
  • 100 g onions
  • 100 g tomato juice
  • salt
  • greens to taste

Peel the onions, finely dice, fry in olive oil until golden brown, add mushrooms to it, salt and simmer for 7 minutes. Then pour tomato juice into mushrooms and onions, simmer for another 10 minutes.

Sprinkle ready-made champignons, fried in olive oil, with chopped herbs.

Champignons baked in pieces in oil in the oven

Champignons fried in oil and baked in the oven in sour cream.

Ingredients:

  • 500 g champignons
  • 100 g sour cream
  • 40 ml vegetable oil
  • 10 g flour
  • salt and spices to taste

1. Peel the mushrooms, rinse and cut into thin slices.

2. To prevent them from darkening, sprinkle them with lemon juice, then fry in oil, sprinkle with flour, pour over sour cream. Bake mushrooms fried in oil in the oven until tender (40-60 min).

Champignons fried in oil, baked with melted cheese.

Ingredients:

  • 1 kg of champignons
  • 100 g mayonnaise
  • 100 g processed cheese
  • 3 potatoes
  • 1 onion
  • 2 cloves of garlic
  • 3 tomatoes
  • 1 bell pepper

  • vegetable oil for frying

Fry the prepared (washed, peeled and chopped) mushrooms in vegetable oil. Rinse the potatoes, peel and cut into thin circles. Cut the pepper into strips, the tomatoes into cubes. Chop the onion, garlic. Grate cheese.

Gently put the prepared food on a baking sheet, pepper and salt. Pour all with mayonnaise, crumble the cheese on top.Bake in the oven for about 15–20 minutes. Serve mushrooms with herbs cut into pieces and fried in oil.
