How to store fresh porcini mushrooms in the refrigerator: can it be done, for how long

The process of storing porcini mushrooms in the refrigerator can be roughly divided into two stages: before and after conservation. In the first case, the mushrooms are kept fresh for no longer than 2 days. In the second case, if frozen, then porcini mushrooms in the refrigerator can be stored for several years. But you need to follow certain rules. For example, before storing porcini mushrooms in the refrigerator for more than 2 days, boil them in salted water. This allows you to suppress the fermentation processes and prolong the shelf life of mushrooms up to 4 days. But the temperature should not rise more than +5 degrees Celsius. Before storing fresh porcini mushrooms in the refrigerator, they must be carefully sorted out, rinsed in running cold water and absolutely all debris must be removed. How to freeze and store porcini mushrooms in the refrigerator

This method of storing mushrooms can be called universal, since in this way you can harvest boiled, fried, and stewed mushrooms. The temperature required for freezing mushrooms is –30 ° C, and for storage –15–20 ° C. You can store porcini mushrooms in the refrigerator after freezing in the freezer for a year. Many housewives really like frozen mushrooms: they have the same taste and aroma, nutritional and vitamin properties as fresh ones. That is why in recent years, with the advent of new improved types of refrigerators and freezers, this harvesting method has become very common.

Before freezing porcini mushrooms in the refrigerator, they do not need to be sorted and distributed in separate containers.

With some types of heat treatment, products are significantly reduced in volume, so you can boil or fry the mushrooms for a short time before freezing. At the same time, they will not lose either taste or vitamin value.

To properly freeze fried mushrooms, certain conditions must be met. They can only be folded into plastic bags and put into the freezer when they are cold. If a lot of juice has formed during frying, it is better to store the mushrooms in small jars (0.5 l). We must not forget that any liquid that has undergone rapid freezing expands. This means that containers with mushrooms must not be overfilled; there must be free space in them. Do not add too much vegetable oil during the frying process.

Also, you do not need to salt mushrooms, put spices, seasonings. This can be done already during the preparation of the dish, guided by the recipe and your own taste preferences. Before frying the mushrooms, you should pre-process them: clean them of earthy lumps, herbs, remove the legs in some species, rinse several times in cold water, and after finishing this, dry them by spreading them out on a towel, preferably in the open air. Mushrooms prepared for freezing are laid out in plastic bags or gastronorm containers, dividing into portions, each of which will be used entirely.

Is it possible to store porcini mushrooms in the refrigerator

The answer to the question of whether porcini mushrooms can be stored in the refrigerator depends on the degree of culinary processing of the raw materials. If these are frozen mushrooms, then the shelf life is very long. Freezing mushrooms, like vegetables and fruits, is not recommended twice. They are stored in the freezer for 6 months or longer. If necessary, it is better to chop the mushrooms without defrosting and put them in the pan. For cooking, you can dip them whole in a saucepan. Boiled mushrooms are also frozen by cooking them in their own juice or with broth.

If you decide to boil them in water and make a broth, first boil the liquid and salt - this will help preserve the aroma and taste.

Mushrooms are boiled for 10-25 minutes, counting the time from the moment of boiling. Boiling in your own juice is the same as frying without oil. At the same time, almost all the nutritional properties of the product are preserved. The mushrooms are peeled and washed thoroughly, and then put in a deep frying pan and put on a low-power fire, adding very little water. If the volume of mushrooms has decreased by three times, they are ready. This usually happens 15–20 minutes after the start of cooking. The boiled mushrooms are cooled and distributed over the jars, poured with the resulting juice and placed in the freezer.
