Surely every housewife, seeing in front of her the harvest of waves after harvesting, thinks: what to do with them? First of all, care should be taken to cleanse, soak and boil the fruit bodies. What do they do with mushrooms for the winter: salting

The first thing that can be done with mushrooms is salt. You can take a classic pickling recipe as a basis. It is used very often, because it has been tested by time and tastes. Many are delighted with such a snack, because the mushrooms are crispy and look very appetizing.

  • Peeled volnushki - 4 kg;
  • Black pepper - 20-25 peas;
  • Salt - 160 g;
  • Bay leaf - 6 pcs.;
  • Cherry and oak leaves;
  • Carnation - 3-5 buds;
  • Dill sprigs.

When using the classic recipe, it is recommended to follow the suggested technique and sequence.

Cut large waves into pieces, leave small ones intact.

Put in water and leave for 2-3 days, constantly changing the water to a colder one - about 3 times a day.

  1. Pass the main product through a meat grinder and put in a saucepan with a thick bottom.

Fried waves for the winter

An equally interesting recipe showing what you can do with the waves is described below. It is very simple, since you need to use only 2 ingredients - fruit bodies and vegetable oil, which can also be replaced with interior lard.

  • Volnushki (soak and boil) - 1.5 kg;
  • Vegetable oil or interior fat;
  • Salt (optional)
  1. Put the boiled waves in a frying pan and fry until the moisture evaporates.
  2. Pour in so much vegetable oil that it completely covers the mushrooms, about 1 cm.
  3. Simmer for 20 minutes, season with salt, and then transfer the mushrooms to sterilized jars. The level of mushrooms should be 2-3 fingers below the neck of the jar.
  4. Pour the remaining oil into jars, and if there is not enough of it somewhere, then you need to heat a new portion in a pan, and only then top up.
  5. Roll up or close with tight nylon lids, allow to cool and take to the basement.

In winter, you will get an almost ready-made snack that you just need to put out of the jar and add to the dish.
