Lean Potato Mushroom Casserole Recipe

To make a simple lean mushroom potato casserole, you need the following foods:

  • 1 kg of boiled potatoes;
  • 0.5 kg of boiled mushrooms;
  • 2 large onions;
  • 4-5 st. l. vegetable oil (for frying);
  • breadcrumbs (or semolina);
  • salt and pepper to taste.

A thick puree should be prepared from boiled potatoes.

Cut the onion into 0.5 cm cubes and put in a frying pan with hot sunflower oil. Fry until transparent and add chopped mushrooms. Continue to fry until golden brown, season with salt and pepper to taste.

Grease a baking dish with sunflower oil and sprinkle with semolina or bread crumbs. Place ½ part of mashed potatoes, smooth and fill with mushrooms.

Cover the remaining puree with the mushrooms, level with a spoon, sprinkle with breadcrumbs and place in a preheated oven. Bake at 170 ° C for 35-40 minutes.

  • 2 pcs. onions;
  • 1 large carrot;
  • 1 kg of potatoes;
  • 0.4 kg of boiled mushrooms;
  • A mixture of green beans and broccoli;
  • 6 tbsp. l. vegetable or olive oil (for frying);
  • 1.5 tbsp. l. flour;
  • salt and pepper to taste.

Make a thick mashed potatoes from boiled potatoes.

Fry finely chopped onions in vegetable oil for 5 minutes.

Grate the carrots with a coarse division, add to the onion and fry until tender. Divide into 2 parts, grind one of them with a blender and add to mashed potatoes.

Add flour to the mixture and stir well so that there are no lumps.

Add the diced mushrooms, broccoli and green beans mixture to the second part of the fried vegetables. Season with pepper, salt to taste and fry over low heat for 15 minutes.
