Why did the boletus turn blue during or after cooking?

Among all the varieties of edible mushrooms, boletus is considered one of the best in taste. They are used in all technological processes: freezing, drying, salting, pickling and frying. Excellent digestibility of butter oils allows them to be used in any dishes. After thorough cleaning of sand, grass and leaves, you can begin to heat the mushrooms. However, it may be found that the butter turned purple after boiling - why is this happening, and what can be done in such cases?

Why did the boletus turn blue after cooking and is it worth worrying?

First of all, you need to know that oil is not characterized by violet, lilac or blue color after heat treatment. This means that along with the butter, there were other mushrooms in the pan - kids (goats). But in this case, you should not be intimidated. This is an absolutely edible type of mushroom, which in taste and appearance practically does not differ from butter. A goat is called a tubular mushroom that belongs to the genus Oily. They are cooked according to the same technology as their "relatives", but when cooked they turn purple. But the mushroom does not get worse from the acquired color. Many housewives decorate boring monochromatic marinades with these purple “butter oils” after cooking. This mushroom, ugly from an aesthetic point of view, can be boiled, stewed, fried, and also dried. And so that it does not darken much and retain its original pink color, you need to add a little table vinegar before cooking.

Another reason why the boletus turned blue after cooking is the too long heat treatment. With prolonged cooking, the vegetable protein is destroyed, and the mushroom acquires a bluish tint, but it is barely noticeable. As already mentioned, boiled butter cannot turn blue or purple during cooking. In such a situation, it is common for them to change their color to beige or light brown. It all depends on its original appearance, which is influenced by the terrain, soil composition and illumination.

Therefore, if the butter turned purple after boiling, do not worry. Apparently, collecting mushrooms, other representatives of this family got into the basket. But boletus, as you know, do not have false (poisonous) counterparts.
