It is generally accepted that the honey agaric legs are not suitable for eating. The only exceptions are very young specimens, the stalks of which have not yet had time to become so hard. But in medium and large mushrooms, the legs are completely removed and discarded, leaving only the caps. Many consider them simply inedible and too harsh. However, this is one organism, so it does not happen that the hat is edible and the leg is not. It turns out that experienced housewives know a lot of recipes for preparing mushroom legs for the winter at home.
The honey agaric's legs are rougher, and the hats are softer. Due to this, the pre-cooking time will vary slightly. So, if for the caps the heat treatment is 15-20 minutes, then for the stalk the time should be increased by 10-15 minutes. However, before boiling, you should remove the lower part of the leg, which does not soften even with prolonged boiling. If desired, you can add a pinch of citric acid to the water. Then you should thoroughly rinse the legs under the tap and start cooking.
Recipe for mushroom caviar from the legs of honey agarics for the winter
There are several recipes for the legs of mushrooms harvested for the winter. One of the most popular is caviar - a versatile product that is added to almost all dishes. So, this preservation is used as a filling for pies, pies, pancakes and pizzas. In addition, in the cold winter, mushroom caviar from the legs of honey agaric is put on the table with different side dishes: mashed potatoes, rice, pasta, buckwheat, etc.
- Fresh mushrooms legs - 1 kg;
- Onions and carrots - 1 large head each;
- Sunflower oil - 5 tbsp. l .;
- Garlic - 3 cloves;
- Salt, pepper (black, red) - to taste.
Thoroughly wash the legs of the fruit bodies and boil in water with the addition of salt or citric acid for 30 minutes.
Rinse again with water and leave in a colander to remove excess moisture.
Meanwhile, grate the carrots, and chop the onion very finely. Both of these ingredients can also be passed through a meat grinder along with honey agarics.
We take the boiled mushroom legs and pass through a meat grinder, put in a deep frying pan with 2 tbsp. l. oils. Fry for 10 minutes and add chopped garlic.

- Honey mushroom legs - 1 kg;
- Vegetable oil - 1.5 tbsp.;
- Salt and pepper to taste.
- We wash the legs of honey agarics under water, cut into small pieces and boil for 20-25 minutes.
- We transfer to a colander or sieve and give time to glass unnecessary liquid.
- Heat the oil in a frying pan and spread the mushrooms, cover and simmer over low heat for half an hour.
- Then we open the lid, increase the heat to medium intensity and continue to extinguish until the liquid evaporates.
- At the end, add salt and pepper to taste, stir and turn off the stove.
- Put the mass into ready-made sterilized jars and pour the remaining oil on top.If there is not enough oil, then you need to prepare a new portion by heating it in a pan. The fat level in each jar should be 1-1.5 cm higher than the mushroom level.
- We close it with plastic lids, let it cool and take out the blank from the mushroom legs for storage for the winter in the basement.
How to prepare the legs of honey agarics for the winter by drying
How else can you prepare honey agaric legs for the winter? In this case, another popular processing method comes to mind - drying. This option is carried out without preliminary boiling, which means it saves you time and energy. Dried mushroom legs can be grinded in a blender and make delicious sauces, gravies or first courses.

- Remove the lower part of the stalk from honey agarics and rinse them slightly in water.
- Spread newspaper in a ventilated place and lay out a layer of legs, leave for several hours.

- The legs of the fruit bodies can be considered ready when, with light pressure, they begin to bend, and with strong pressure, they crumble.
- Fold the blank in glass jars, cover with parchment paper and wrap the neck with thread.
