Caviar from honey agarics with carrots for the winter in a slow cooker

This version of caviar from honey agaric in a slow cooker for the winter is prepared quickly and turns out to be very tasty. For this preparation, you can use overgrown and broken mushrooms, the main thing is that they are not wormy.

  • Fresh mushrooms - 2 kg;
  • Carrots - 700 g;
  • Lean oil;
  • Onions - 500 g;
  • Ground black and white pepper - ½ tsp each;
  • Salt to taste;
  • Sugar - 1 tbsp. l .;
  • Black peppercorns - 5 pcs.

Honey mushrooms are cleaned of mycelium and debris, part of the leg is cut off, washed in water for 10 minutes and boiled for 25 minutes.

Throw in a colander or metal sieve and then pass through a meat grinder or use a blender.

Onions and carrots are peeled, chopped into cubes and fried in a slow cooker in vegetable oil for 10 minutes in the "Fry" mode.

Grind the mass in a blender or pass through a meat grinder, and then mix with mushrooms.

Put everything in a multicooker bowl, add a mixture of ground peppers, peppercorns, salt to taste and sugar, mix.

Close the lid of the multicooker and set the "Quenching" or "Baking" mode for 30-35 minutes.

After the sound signal, enter ½ tsp. citric acid or 3 tbsp. l. vinegar, mix and turn on the slow cooker for another 5-7 minutes.

Caviar from honey agaric is distributed into sterilized 0.5 liter jars, covered with plastic lids, allowed to cool and placed in the refrigerator.

Peel and boil the mushrooms for 25 minutes, let cool and mince.

Put the mushroom mass in a multicooker bowl, pour oil, fry until the liquid evaporates and put in a bowl.

Peel carrots and onions, wash, chop and fry in a slow cooker for 15 minutes, put in a bowl with mushrooms.

Wash the tomatoes and mince, put in a slow cooker.

Mushrooms, onions and carrots also pass through a meat grinder, combine with tomatoes in a multicooker bowl and simmer for 20 minutes until most of the liquid has evaporated. In this case, you need to stir the mass so that it does not burn.

Pour in 1 tbsp. vegetable oil in caviar, salt, add diced garlic and turn on the multicooker in the "Stew" mode for 40 minutes.

After the signal, pour in the vinegar, mix well and turn on the "Quenching" mode again for 20 minutes.

As soon as the signal sounds about the end of the process, open the lid and put the caviar in sterilized jars.

Close with lids, allow to cool completely and take to the basement.
