Ingredients:

  • For filing: 50 g Parmesan cheese, a small bunch of basil.

Preparation:

Wash, dry and peel the mushrooms, cut the large ones into 4 parts, leave the small ones whole. Cut the zucchini into thin slices. Crush the peeled garlic with the flat side of a knife.

To make the pasta with mushrooms delicious, you need to fry the garlic in heated olive oil for 5 minutes until golden brown, remove from the pan. Add zucchini and mushrooms, season with salt and pepper. Fry over high heat for 5 minutes.

Boil the pasta in plenty of salted water according to the instructions on the package. Throw in a colander, retaining the water.

Add pesto sauce and 150 ml broth to the pan with mushrooms and zucchini, mix. Combine the mixture with the paste, mix. When serving, sprinkle the pasta with mushrooms prepared according to this recipe with grated Parmesan and finely chopped basil.

Risottirona pasta with honey agarics

Ingredients:

150 g of rice paste, 1/2 red onion, 125 g of boiled honey mushrooms, 50 ml of dry white wine, 500 ml of vegetable broth, 4 tsp. parmesan, salt to taste, olive oil for frying

Preparation:

Before preparing the pasta with mushrooms, you need to peel the onion and cut it into small cubes. Fry until transparent in a little warmed olive oil.

Add mushrooms, fry for another 2 minutes.

Pour the pasta into the pan, fry until all the oil is absorbed.

Pour in dry white wine, simmer until the liquid evaporates.

Pour in vegetable broth in several portions, cook rice until al dente.

Spaghetti with boletus and bacon

Ingredients:

300 g spaghetti, 500 g boletus, 120 g Parma ham or smoked bacon, 1 onion, 1 clove of garlic, salt and freshly ground black pepper to taste, 3 tbsp. l. olive oil for frying. For serving 50 g Parmesan cheese, a small bunch of parsley.

Preparation:

Before cooking spaghetti with mushrooms, you need to cut the peeled onion into half rings, the peeled garlic and Parma ham into thin slices. Wash, dry and peel the mushrooms, cut into large slices.

Saute the onion and garlic in heated olive oil for 5 minutes until golden brown. Add ham, fry over medium heat for 5 minutes. Put the mushrooms, fry for another 20 minutes, stirring constantly.

Boil the spaghetti in salted boiling water according to the instructions on the package. Drain the water.

Put the spaghetti on portioned plates, top - the contents of the pan, pepper.

Cut the cheese into thin slices, finely chop the parsley.

Rigatoni with porcini mushrooms in a creamy sauce

Ingredients:

50 g rigatoni, 140 g porcini mushrooms, 1 onion, 200 ml cream 33% fat, 1.5 tbsp. l. with a slide of grated parmesan, 1-2 tbsp. l.water in which the pasta was cooked, salt and freshly ground black pepper to taste, olive oil for frying.

Preparation:

Boil rigatoni in boiling salted water according to package directions. Save the broth.

Cut the peeled onion into small cubes. Wash, dry and peel porcini mushrooms, chop coarsely. Fry both ingredients in heated olive oil over high heat for about 1.5 minutes.

Add the pasta to the pan, pour in 1-2 tbsp. l. water in which the pasta was cooked. Pepper, stir.

Add cream, evaporate until thick (avoid boiling).

Remove the pasta from heat, sprinkle with grated cheese, stir and serve immediately.

Linguine with dried mushrooms, nuts and spinach

Ingredients:

150 g linguine, 100 g peeled walnuts, 70 g dried porcini mushrooms, 100 g fresh spinach, 150 ml cream 33% fat, salt to taste, olive oil for frying. For serving: a few sprigs of parsley.

Preparation:

Boil linguine in salted water until al dente, drain in a colander.

Soak dried mushrooms in warm water for 1 hour. Squeeze out excess liquid, chop finely.

Chop the walnuts with a knife or chop with a blender, being careful not to turn into flour.

Fry mushrooms and nuts in heated olive oil for 1-2 minutes. Add spinach torn by hand (2/3 of the total), warm up. Pour in the cream, evaporate to 1/3 of the volume.

Put the cooked pasta in a frying pan, heat for 2-3 minutes to combine tastes and aromas, add the remaining spinach. When serving, garnish the finished dish with parsley petals.

Mushrooms with pasta

Ingredients:

50 g dried mushrooms, 2 glasses of pasta, 2 onions, 1 tbsp. a spoonful of ground crackers, 1 egg, 1 tbsp. a spoonful of sour cream, salt, pepper to taste.

Before cooking pasta, mushrooms need to be washed, soaked, boiled, finely chopped and fried. Add fried onions, salt, pepper and fry everything together for a few more minutes.

Preparation:

Boil pasta or noodles, put in a colander.
