If meat or chicken is a necessary ingredient for your planned dish, you can try to "lighten" it by using a sirloin or breast instead of brisket or thighs. We suggest using recipes for dishes from potatoes, mushrooms and chicken fillets: of course, you cannot call them dietary, but you can get rid of some of the calories. And if you use a turkey, then the dish will turn out to be even more dietary.

Recipes for potatoes with mushrooms and chicken fillets

Potato gnocchi with chicken fillet and mushrooms

Ingredients:

  • 500 g potatoes
  • 200 g cheese
  • 200-300 g flour (I'm not sure exactly how much is needed, I added gradually, achieving the desired dough consistency)
  • 400 g chicken fillet
  • 300 g of mushrooms (I took champignons)
  • 1 PC. carrots
  • 1 PC. onions (or 50g leeks)
  • 50 ml dry red wine
  • 3 tbsp. l. olive oil
  • 2 tsp thyme
  • 3 tbsp Sacla Originale Parmigiana sauce
  • a few parsley leaves for garnish
  • salt, black pepper to taste

Peel the potatoes, cut into pieces, boil in salted water. We will need to make mashed potatoes out of it.

Finely chop the carrots and onions, fry in olive oil, add a little water and simmer for 5-7 minutes.

Add chicken fillet, cut into pieces, fry until golden brown. Add wine, wait until it evaporates.

Add thinly sliced ​​mushrooms, thyme, cover and simmer over low heat for 10 minutes. Then add salt and pepper.

Make mashed potatoes, add 150 g of grated cheese, then add flour until the dough stops sticking to your hands, and it becomes possible to sculpt sausages from it.

After making sausages from dough with a diameter of about 1.5 cm, cut them into pieces 2-3 cm long.

Dip the gnocchi into boiling salted water, cook for 5 minutes.

Add the Sacla sauce to our stew, remove the gnocchi with a slotted spoon, stir. Sacla sauce can be replaced with tomato puree + grated cheese + finely chopped celery stalk a little flour.

When serving fillet gnocchi with mushrooms and potatoes, sprinkle with the remaining cheese, top with parsley.

Salad with mushrooms, potatoes and chicken

Ingredients:

  • carrots - 1 pc.
  • vegetable oil - for frying
  • porcini mushrooms - 250 g.
  • boiled potatoes - 2 pcs.
  • boiled chicken fillet - 250 g.
  • boiled eggs - 4 pcs.
  • pickled cucumbers - 4 pcs.
  • mayonnaise
  • walnuts - ground 50 g.

To prepare a salad of chicken fillets with potatoes and mushrooms, grate the carrots and fry in vegetable oil until soft.

Separately fry the chopped porcini mushrooms until tender.

Cut the chicken into small cubes and place in a bowl.

Cut the potatoes into small cubes and fold them over the chicken.

Put carrots and mushrooms here.

Grate egg whites and place in a bowl.

Cut the cucumbers into cubes and add to the rest of the ingredients.

Season the salad with mayonnaise, mix. Refrigerate overnight.

Place the salad on a platter using a ring before serving. Sprinkle the surface of the chicken fillet salad with mushrooms and potatoes with chopped yolk and nuts. Serve to the table.

Chicken cutlets with mushrooms in batter

  • 1 kg chicken fillet,
  • 500 g potatoes
  • 400-500 g champignons,
  • 2 medium onions
  • 2 eggs, ½ cup vegetable oil,
  • 4-5 Art. l. bread crumbs,
  • 2-3 st. l. flour,
  • salt and spices to taste

Wash the chicken fillet. Peel the onion. Skip the chicken and one onion through a meat grinder. Wash the mushrooms, peel, cut into small slices. Cut the second onion into small cubes. Spread the champignons and onions in a little oil, add to the minced meat, salt, add spices, beat in one egg and mix thoroughly. Form cutlets from minced meat, breaded in breadcrumbs. Beat the remaining egg with flour, a pinch of salt and 1-2 tbsp. l. water into a lush foam.Dip cutlets in batter and fry in vegetable oil until tender.

Boil potatoes, put them on a dish and serve with chicken cutlets. Bon Appetit!

Recipe for potatoes baked with mushrooms and chicken fillet

  • chicken fillet - 1 kg;
  • mushrooms (according to your taste) - 500 g;
  • potatoes - 4 pcs;
  • flour - st. spoon;
  • garlic - 2 cloves;
  • cream - it is better to use the fattest, 500 ml;
  • cheese - fat, 200 g;
  • salt and pepper, a piece of butter.

Preparation:

Remove the skin from the breasts (if you do not have fillets) and remove the bones. Cut the meat into slices.

Fry it lightly, but not until tender.

In the same pan, brown the chopped garlic, add your favorite mushrooms to it. Add potatoes, cut into small straws. When the water has evaporated, add flour. After another minute, it's time to add cream, salt a little, add pepper. After a few minutes, the mass will thicken and you can turn it off. Heat it over low heat.

Put the chicken in the mold, on top of it - the mushroom-potato mixture, sprinkle with cheese and - in the oven. After 30 minutes at 200 degrees, the potatoes baked with mushrooms and chicken fillet can be served.

Oven chicken, potato and mushroom fillet nests

Filling:

  • champignons 100 g
  • onion 1 pc.
  • sour cream 100 ml
  • chicken fillet 200 g
  • Russian cheese 100 g
  • ground black pepper 1 pinch
  • curry 1 pinch
  • 1 pinch salt

For breading:

  • ground crackers 100 g

Nests:

  • potatoes 5 pcs.
  • egg 1 pc.
  • butter 20 g
  • flour 1 tbsp. l.
  • salt 1 tsp

Make mashed potatoes. Add butter to the puree while still warm. Allow to cool. Let's take care of the filling: peel the onion, wash and cut into half rings. Cut the mushrooms into slices.

Heat a frying pan with vegetable oil and fry the onion until transparent. Add mushrooms and evaporate all liquid. Fry for 5 minutes.

Then add sour cream, salt and pepper to taste. Simmer for 7-10 minutes over low heat.

Wash the chicken fillet, dry with a napkin, cut into small cubes. And fry for about 10 minutes. Add salt and pepper to taste, season with curry.

Grate cheese on a coarse grater. Add an egg to the puree, then flour and mix everything well until smooth!

Divide potato dough into 7 balls, roll each in breadcrumbs. Place in a mold greased with butter.

Form a nest from each ball.

Place a few slices of fried chicken fillet in each cavity.

Then a teaspoon of mushrooms. And bake in the oven for 20 minutes at a temperature of 200 degrees.

Ingredients:

  • Chicken fillet 600 g
  • Fresh champignons 450 g
  • Potatoes - 6 pcs.
  • Bulb onions 2 pcs.
  • Sour cream 7 tbsp. l.
  • Flour 3 tbsp. l.
  • Butter 60 g
  • Salt, pepper to taste

To prepare a dish of chicken fillets, potatoes and mushrooms in sour cream sauce, you need to peel the onion and chop it finely.

Cut the mushrooms into slices, if they are medium-sized, or into cubes.

Rinse the chicken fillet and cut into medium-sized pieces.

Cut the potatoes into small cubes.

Melt the butter in a frying pan and fry the onions in it first, and then add the mushrooms.

Chicken can be added after 10 minutes. While stirring, fry for about 5 minutes all together. Add potatoes and fry for about half an hour.

Prepare sour cream sauce. To do this, dilute sour cream with a small amount of boiled water and add flour. To avoid the formation of lumps, you can sift the flour through a strainer into the dissolved sour cream, stirring continuously. As a result, you should get a homogeneous sauce without lumps.

Pour the sauce over the chicken fillet with mushrooms and potatoes right in the pan.

Season with salt, pepper and, if desired, add your favorite spices. Mix everything well.

Simmer chicken breasts in sour cream sauce with mushrooms under the lid for about half an hour.

Recipe for potatoes with mushrooms and chicken fillet in a slow cooker

Potatoes with mushrooms and steamed chicken fillet

Products:

  • Potatoes: 1 kg. Mushrooms: 400 g.
  • Chicken fillet: 200 gr.
  • Onions: 2 pcs. Salt: ½ tsp
  • Refined vegetable oil: 3-4 tbsp. l.
  • Greens: 1-2 tbsp. l. (parsley, dill, marjoram, basil, cilantro).
  • Spices (a mixture of hot peppers or red peppers, oregano or a ready-made mixture of herbs, ground cumin).

How to cook:

Rinse the mushrooms and cut them into wedges.

Fillet cut into small cubes or fiber.

Chop the onion finely.

Lightly fry the onion with mushrooms in vegetable oil in a separate frying pan for 5-10 minutes.

Cut the potatoes into large wedges.

Dip the potatoes in the mixture: ground cumin, pepper, herbs, salt.

Place the potatoes in a mesh tray.

Pour 2 cups of water into the multicooker bowl.

Cook vegetables in STEAM mode for 30 minutes.

Add fried mushrooms, onions and fillets.

Sprinkle with finely chopped herbs.

Cook potatoes with mushrooms and fillets in a multicooker in STEAM mode for another 10 minutes.

Turkey fillet dish with potatoes and mushrooms

Required Ingredients:

  • 0.8 kg turkey fillet;
  • 0.3 kg of any mushrooms;
  • 0.6 kg of potatoes;
  • 0.4 kg of onions;
  • salt pepper;
  • 0.4 kg sour cream;
  • vinegar;
  • 0.2 kg of cheese.

Cooking method:

  1. Peel the onion, cut into thin half rings, marinate in water acidified with vinegar for 15-20 minutes.
  2. Cut the turkey into random pieces, season with salt, pepper and place in a baking dish in the oven.
  3. Remove the onion from the marinade, squeeze lightly and spread over the meat.
  4. Cut the mushrooms into slices, put on the onion, add salt. If desired, you can lightly fry them in a pan, so they will be more aromatic.
  5. Peel the potatoes, cut into slices and spread over the mushrooms and season with salt. If a turkey with mushrooms is royally cooked without it, then simply skip this step.
  6. Salt and pepper the sour cream, pour potatoes on top and send the form to the oven for 40 minutes. The required temperature is 190-200 ° C.
  7. Then take out the dish, sprinkle with grated cheese and bake for another 5 minutes until an appetizing crust appears. Do not keep the turkey fillet dish with potatoes and mushrooms in the oven for a long time, otherwise the cheese will become hard and dry.

Potatoes with chicken and mushrooms in pots

Ingredients:

  • Chicken fillet - 400 gr
  • Potatoes - 250 gr
  • Forest mushrooms - 250 gr
  • Cheese - 60 gr
  • Sour cream - 40 gr
  • Onions - 2 pieces
  • Garlic - 2 cloves
  • Flour - 80 gr
  • Water - 150 ml
  • Salt
  • Spices
  • Pepper

First, rinse the chicken fillet under cold water and put on paper napkins. Then, as soon as the meat is dry, cut it into small pieces. Add salt, spices, pepper to the flour, mix and, roll the meat, fry on all sides in oil. Chop the onion finely, and the mushrooms into pieces.

First, fry the onions, then add to the mushrooms and fry everything again. Cut the peeled potatoes into small cubes and place on the bottom of the pots. Grate the cheese, add sour cream, spices, squeezed garlic, water and chopped herbs to it and mix well. On top of the potatoes, put the meat in pots, after the mushrooms and fill with the prepared sauce. Place the pots in an oven preheated to 230 degrees for about 40 minutes. Serve chicken fillet with potatoes and mushrooms directly in pots, placing plates under them.

Chicken fillet with mushrooms and milk in pots

Required Ingredients:

  • chicken fillet;
  • onion;
  • carrot;
  • Forest mushrooms;
  • potato;
  • milk;
  • salt pepper.

Cooking method:

  1. We cut the fillet into arbitrary pieces, send them to fry in a pan.
  2. Chop onion and mushrooms, fry for several minutes with poultry.
  3. Place the fried foods in pots.
  4. Peel and cut the potatoes and carrots. Diced potatoes, carrots in thin slices, you can grate on a coarse grater. We lay out in pots.
  5. Salt the milk, mix thoroughly until it is completely dissolved and fill the pots to half. Cover the pots with chicken fillet, mushrooms and potatoes with lids and bake in the oven for about an hour at medium temperature.

Products:

  • Chicken fillet - 500 g
  • Potatoes - 1 kg
  • Mushrooms - 200 g
  • Hard cheese - 200 g
  • Onions - 150 g
  • Mayonnaise - 50 g
  • Sour cream - 300 g
  • Salt to taste
  • Pepper to taste
  • Chicken seasoning - to taste
  • Vegetable oil - 1-2 tbsp. spoons

Turn on the oven. Wash the chicken fillet, dry and cut into small pieces.

Fold the prepared fillet into a bowl, season with salt and pepper, add mayonnaise. Mix well and refrigerate for 20 minutes.

Now, to cook fillets with mushrooms and potatoes in the oven, you need to peel and wash the onions. Cut into half rings.

Peel the potatoes, wash and cut into thin slices.

Chop mushrooms as you like.

Grate hard cheese on a coarse grater.

Grease the form with vegetable oil. Lay out the first layer - onions.

Put a layer of half the potatoes on the onion.

Make sour cream sauce, for this mix sour cream, pepper, salt and spices to taste. Mix everything well.

Grease the potatoes with half the sour cream sauce. Top with half the chicken fillet. Lay out the chopped mushrooms. Sprinkle half of the cheese on top.
