Edible talker mushrooms: photo and description of smoky, orange (bent) and fragrant talkers

Along with the poisonous ones, there are a number of edible talker mushrooms that are eaten after preliminary boiling. They differ from inedibles by their brighter color and less tart aroma.

Most often, chopped talker mushrooms are used as a filling for pies, since they are harsh when boiled or fried.

Hat (diameter 5-22 cm): matte, reddish, may fade to pale yellow with brown or rusty spots. Fleshy, has the shape of a bell, but over time it becomes flatter, and then depressed. The edges are bent, in the center there may be a barely noticeable tubercle. The talker's hat is bent and smooth to the touch.

As seen in the photo, orange talker (Lepiota aspera) got its name because of its bright color.

Leg (height 6-15 cm): dense and fibrous, cylindrical and tapering from top to bottom. The color is usually either the same as that of the cap, or slightly lighter, darker at the base.

Plates: brown or cream.

Pulp: dry, does not change color on the cut and when interacting with air. The smell is mild, reminiscent of the aroma of almonds.

Doubles: talkersgigantic (Leucopaxillus giganteus) and whitish (Clitocybe dealbata)... Giant is usually larger and does not have a tubercle in the center of the cap. And on the cap of a very poisonous whitish talker there is a characteristic mealy bloom.

Where can I find: at the edges of deciduous or mixed forests.

When it grows: from early July to mid-October in temperate countries of the Eurasian continent.

Eating: in any form. This is a delicious mushroom, but experienced mushroom pickers advise using only young talker hats for culinary purposes, since the old ones can be tough.

Application in traditional medicine: does not apply.

Other name: smoky gray talker.

Smoky talker hat (Clitocybe nebularis) (diameter 7-23 cm): glossy, usually ashy, dirty yellow or light brown, strongly fades in the sun and can become almost white or light gray. It has the shape of a hemisphere, with a slight bulge in the center, over time it becomes practically prostrate. The edges are usually wavy and uneven. Smooth to the touch.

Leg (height 5-15 cm): smooth or slightly white, slightly lighter in color than the cap.

As you can see in the photo of the smoky govorushka, the stem of the mushroom is very dense, usually has a strong thickening almost at the very base.

In young mushrooms, it is filled with fibrous matter, while in old ones it is hollow.

Plates: usually dirty or light yellow, thin and frequent. They do not adhere to the stem and are easily separated from the cap.

Pulp: dense, white color, which does not change on cut and when interacting with air. The taste can be sour, very sweet or spicy. And the smell can resemble the acrid smell of rot, or the scent of flowers or fruits.

Doubles:tin entoloma (Entoloma sinuatum), but it has an ocher-colored bonnet and light pink plates.

When it grows: from early August to mid-November in temperate countries of the Northern Hemisphere.

Where can I find: in mixed or coniferous forests. It often grows on rotten leaves and branches, not far from spruce and birch trees, forming "witch circles".

Eating: young mushrooms are consumed after preliminary boiling (for about 20 minutes).Insufficient heat treatment can cause moderate eating disorders. Under no circumstances should it be eaten raw. The talker is considered to be of little value, as it boils down a lot.

Application in traditional medicine: folk healers do not use. For official medicine, the antibiotic nebularin is produced from this type of mushroom.

Edible mushroom sweet talker (Clitocybe odora)

Category: conditionally edible.

Other names: anise talker, odorous talker.

Hat (diameter 4-9 cm): pale blue, smooth, with a small tubercle. In young mushrooms, it is slightly convex, with time it becomes practically open or slightly depressed.

Fragrant talker leg (height 3-7 cm): gray or brownish, maybe with a greenish tint. Cylindrical, widening towards the base, where slight pubescence is noticeable.

Plates: frequent and wide, pale green in color.

Pay attention to the photo: Fragrant talker has a thin, watery gray flesh. The smell is similar to the aroma of anise, due to which the mushroom received a second, less common name - anise talker.

Doubles:fragrant talker (Clitocybe fragrans)that doesn't smell like anise.

When it grows: from mid-July to mid-October in Europe and North America.

Where can I find: often in coniferous forests next to spruce trees, occasionally in mixed plantings.

Eating: after preliminary boiling, in pickles. It is considered a mushroom of not the highest quality. The peculiar aroma disappears after boiling.

Application in traditional medicine: does not apply.
