Pickled, boiled and fried mushrooms on skewers: recipes for the oven and pans
Pickled, boiled and fried champignons on skewers are very original mushroom snacks, which will not be difficult to prepare, and these dishes will certainly make a splash. Instead of skewers for such snacks, you can use ordinary toothpicks, only in this case, the canapes need to be made not too high so that there is room for grabbing on the wooden stick.
Canapes with boiled and fried mushrooms
Canapes with mushrooms and tomatoes.
Ingredients:
- 4 slices of bread
- 4 mushrooms,
- 1 egg,
- 1 dining room
- a spoonful of mayonnaise,
- 1 tomato,
- cilantro greens.
Cooking method:
Rinse cilantro greens, dry, chop finely.
Hard boil the egg, peel and grate on a coarse grater.
Boil mushrooms, chop finely, mix with mayonnaise and egg.
Wash the tomato and cut into slices.
Put 1 cup of tomato on slices of bread, spread the cooked mass on top and sprinkle with cilantro.
Pierce canapes with champignons with skewers and serve.

Ingredients:

- 100 g of boiled champignons,
- 1 hard boiled egg
- 1 tbsp. l. mayonnaise,
- 1 tbsp. l. chopped parsley.
Cooking method:
- Peel and grate the egg.
- Finely chop the mushrooms, mix with mayonnaise and egg.
- Spread the mixture over the bread slices.
- Decorate canapes with parsley, pierce with skewers and serve.

Ingredients:
- Grape leaf - 3 pcs.;
- Canned beans - 1 tbsp. spoon;
- Boiled eggs - 2 pcs. ;
- Mayonnaise - 2 tbsp. spoons;
- Champignons - 100 g;
- Butter - 2 tbsp. spoons;
- Boiled rice - 2 tbsp. spoons;
- Salt and pepper to taste.
Cooking method:
Boil eggs, peel, cut into small cubes or chop on a grater, mix with beans. Boil rice in advance, add to eggs and beans. Season the resulting mass with mayonnaise, mix well. Chop the champignons, fry in oil until half cooked, mix with the rest of the ingredients, salt and pepper. Scald the grape leaves in boiling water, then cool and wrap the finished mixture in them. Fasten the sheet with the filling, put it in the oven for 5 minutes and keep the mushrooms there on skewers at a temperature of 200 degrees.
Canapes with mushrooms, crayfish, anchovy fillets and capers.
Ingredients:
- Bread - 7 slices
- Crayfish - 10 pcs. ;
- Champignon mushrooms - 30 g;
- Mayonnaise - 100 g;
- Fillet of anchovies - 20 g;
- Capers - 10 g;
- Vegetable oil - 2 tbsp. spoons;
- Parsley, salt, pepper.
Cooking method:
Boil the crayfish, cut the meat into small cubes. Boil mushrooms, chop, add to crayfish. Put finely chopped anchovies, mayonnaise, salt, pepper to this mixture, mix everything thoroughly. Fry the bread in oil in a pan. Spread the resulting mixture on bread in a thick layer, top with parsley and capers. Pierce the finished canapes with skewers.

Canapes with boiled chicken and pickled mushrooms.
- 2 boiled chicken legs,
- 2 slices of white bread
- frying fat
- 1 hard boiled egg
- 4 pickled mushrooms,
- 1 pickled cucumber
- mustard,
- salt,
- black pepper,
- 1/2 cup low fat broth
- 2 tbsp. tablespoons of mayonnaise.
Peel the cooked meat and chop finely. Add mushrooms, cucumbers and diced egg. Season the mixture to taste with salt, black pepper, mustard and spread evenly on toasted canapes. Place canapes with pickled mushrooms on skewers.
When serving, pour the diluted broth with mayonnaise.
Canapes with fried eggs, pickled mushrooms and boiled bacon.
Ingredients:
- 2 eggs, a slice of boiled bacon,
- 2-3 pickled mushrooms,
- baked meat sauce or other sauce,
- mustard,
- parsley.
Cooking method:
- Arrange the bread, slightly moisten and fry.
- Cut the boiled bacon into large pieces and mix with fried eggs.
- Add pickled mushrooms, spread with mustard.
- Put the mixture on top of the canapés, sprinkle with parsley and, when serving on the side, add 1–2 tbsp. tablespoons of sauce.
- For convenience, put canapes with pickled mushrooms on skewers.
- Served with pickles, tomato puree ("lutenitsa") or salad, depending on the season.

- 2 legs of boiled chicken;

Preparation:
Peel the boiled meat from the tendons and mince. Add chopped mushrooms, pickled cucumber and diced egg. Salt the mixture, season to taste with salt, mustard, black pepper, 2 drops of rum, evenly apply to the prepared canapes. Immediately before serving, place on skewers, season with diluted mayonnaise.
Turkey canape with ham and pickled mushrooms on skewers.
Ingredients:
- Turkey fillet - 500 g;
- Ham - 200 g;
- Pickled champignons - 200 g;
- Ghee butter - 50 g;
- White wine vinegar - 30 ml;
- Parsley greens - 1 bunch;
- Salt and pepper to taste.
Cooking method:
- Cut the turkey fillet into pieces, the ham into cubes.
- Pieces of turkey, cubes of ham and pickled mushrooms are alternately strung on wooden skewers, oiled, salted, pepper and fried on a wire rack.
- Sprinkle the finished turkey with vinegar, sprinkle with chopped parsley and serve.

Canape "Shashlik" with meat and mushrooms on skewers
Ingredients:
- Pork meat - 100 g;
- Small onions - 2 pcs. ;
- Champignons - 50 g;
- Ketchup - 2 tbsp. spoons;
- Creamy margarine - 2 tbsp. spoons;
- Greens, salt and pepper to taste.
Cooking method:
- This dish, in fact, is a kebab, which reflects its name.
- To prepare it, pork meat needs to be cut into small pieces, salt and pepper.
- Cut the onion into rings, the mushrooms into thin slices, then fry with the meat in margarine.
- String the finished components on skewers, pour with ketchup.

Oven-baked champignon skewers
Ingredients:
- Champignons of approximately the same medium size - 300 g;
- Vegetable oil - 2 tbsp. l. ;
- Soy sauce - 2 tbsp l;
- Lemon juice - 1 tsp ;
- Ground hot pepper;
- Salt;
- Dill;
- A couple of garlic cloves.
Cooking method:
To cook a kebab on skewers, the mushrooms need to be washed, dried, and spread out on a wide dish. Chop the garlic, sprinkle with mushrooms on top. Chop the dill and paprika, add to the mushrooms. Mix all components thoroughly, put in a baking bag. Pour soy sauce, vegetable oil, lemon juice there, salt and pepper, close the bag and shake well so that all the ingredients are mixed.
Before cooking mushrooms on skewers in the oven, keep the mushrooms in the resulting mixture for at least 15 minutes, you can take longer, the better they will marinate.
