However, cleaning them from adhering dirt and slippery film is not an easy job. And if this procedure is mandatory for representatives of large individuals, then what to do with their young counterparts? Is it necessary to clean the small oil, because they do not have time to “get dirty” and absorb harmful substances from the air?
Do I need to clean small oil from the film before use?
To understand whether it is necessary to clean small butter from the film, you need to decide on which dish you are going to use them in. So, if the mushrooms go into the soup, then preliminary cleaning is simply necessary here. The fact is that when in contact with water, the oily film of the cap of the oiler swells strongly, imparting a sticky viscosity to the water, reminiscent of jelly. In this case, it is unlikely that anyone will want to try the soup in the form of glue, and it will be difficult to get into a spoon.
If everything is clear with the soup, then the question arises: is it possible not to clean small butter before other harvesting processes? I must say that small young mushrooms are much more difficult to clean from the film than adults. Therefore, someone decides to just rinse them thoroughly under running water, while someone painstakingly tries to remove the film from the cap.

The hat of a young butter dish is only 1-2 cm in diameter, so many simply do not bother cleaning them, but they are thoroughly washed in water, or dipped in boiling water for a few seconds. Then the adhering dirt and grass will lag behind the mushroom themselves. However, it must be remembered that a wet butter cap makes the marinade dark and slimy, although this does not affect the taste in any way. Simply peeled oil from the film looks more aesthetically pleasing in the jar.
Is it possible not to peel small butter, but to pickle them right away? It is possible, and many experienced mushroom pickers note that this will significantly save you time and effort. After all, a small mushroom strives to slip out of hands during cleaning, which makes the work very difficult and slows down, especially if a lot of young oil has been collected. Therefore, for pickling, it is enough just to thoroughly rinse them from dirt and adhering leaves, and then boil them in salted water for 15 minutes.
