Noodles are often added to mushroom soups - a type of flat-shaped pasta. As with vermicelli, the noodles are placed in water or broth brought to a boil. You can cook first courses with store-bought pasta or make your own noodles from wheat or rice flour with the addition of water. Aromatic spices are added to give the soup a special taste.

How to cook champignon noodles: simple recipes

Mushroom soup with homemade noodles and mushrooms.

Ingredients

  • flour - 400 g
  • dried champignons - 5-6 pcs.
  • potatoes - 10-12 pcs.
  • carrots - 1 pc.
  • onions - 1 head
  • vegetable oil - 2 tbsp. spoons
  • salt to taste
  • parsley or celery to taste

It is better to make noodles for this soup with champignons yourself, because homemade noodles are much tastier than bought in a store, which means that the dish will only benefit from this.

So, to make noodles, knead the dough from water and flour, cover it with a towel for half an hour, and leave it in a warm place.

Then the dough needs to be rolled out thinly, dried a little on the table and then cut into the noodles.

Now you can proceed to the preparation of the dish itself. Rinse the mushrooms, peel, put in a container with cold water, leave them for 3 hours, then boil them, put them in a colander, drain off excess liquid. Do not pour out the mushroom broth, save for making soup.

Cut the washed and peeled carrots into thin strips, the potatoes into cubes and boil together with the carrots in slightly salted water.

Place boiled vegetables in mushroom broth, add pre-boiled homemade noodles there.

  2. After the time has elapsed, chop the mushrooms, put in a ceramic deep container.
  3. Fry onions in ghee, add noodles to it, add water in which the mushrooms have been soaked, salt.
  4. Close the container tightly with a lid, put it in the airfryer for 25 minutes at a temperature of 260 degrees and a high ventilation rate.
  5. After the end of the set program, add chopped herbs and spices to the soup and cook for another 10 minutes using the same parameters.

Udon noodles with mushrooms.

Ingredients

  • Champignons 200 g
  • Leeks 60 g
  • Chili pepper 1 pc.
  • Udon noodles (boiled) 400 g
  • Vegetable oil 200 ml
  • Sake 80 ml
  • Teriyaki sauce 60 ml
  • Oyster sauce 60 ml
  • Green onions 20 g
  • Salt pepper
  • For mushroom sauce
  • Onions 10 g
  • Garlic 1 clove
  • Celery stalk 15 g
  • Champignons 20 g
  • Olive oil 10 ml
  • Miso paste light 50 g
  • Sake 20 ml
  • Mirin 30 ml

To prepare such a mushroom soup with noodles and champignons, you need to prepare a sauce. To do this, cut the onion, garlic, celery and mushrooms into small cubes. Pour olive oil into a preheated stewpan, put vegetables to fry. Then add the miso paste, stir and fry for a few minutes. Pour in sake and mirin, stir until smooth and add sesame seeds, put on low heat. Warm up, remove from the stove and cool.

Remove the stems of the mushrooms and make star-shaped notches on the caps. Cut the leeks diagonally into rings. Cut the chili into rings.

Boil the noodles in boiling water, then rinse under cold water.

Pour some of the vegetable oil into a preheated pan and put the chili rings, then add the noodles, mix. Season with salt, pepper, pour in the prepared sauce. Mix everything thoroughly and put on plates.

Separately, pour vegetable oil into a preheated pan, fry the mushrooms for several minutes, then add the leeks, salt, pepper, pour in sake, teriyaki sauce and oyster sauce, mix everything well.

Place the mushrooms on top of the noodles in a circle. Decorate in the center with chives.

  • 1 head of Chinese cabbage
  • 200 g fresh champignons
  • 300 g chicken breast
  • 50 g rice noodles
  • 2 tbsp. l. vegetable oil
  • 2 tbsp. l. soy sauce
  • 1 onion
  • green onions

  1. Pour oil into the multicooker bowl and fry the prepared chopped champignons and chopped onions in the BAKING mode for 10 minutes. After the onion and mushrooms are cooked, lay the chicken meat, cut into thin strips.
  2. Pepper and fry until tender in BAKING mode for about 40 minutes.Add soy sauce in the last minutes of cooking.
  3. Then put it back into the BAKING mode, only for 20 minutes, and pour boiling water, a little short of the limit line.
  4. Put rice noodles in boiling water and cook for 10 minutes.
  5. Chop the cabbage into thin strips. Add the cabbage about 2 minutes before the rice noodles are ready. Then bring the soup to readiness in the heating mode for about 1 hour.
  6. Sprinkle some chopped herbs on the rice noodle soup and mushrooms before serving.

Champignon soup with noodles.

Ingredients

  • 200 g fresh champignons
  • 1 onion
  • 1 parsley root
  • 1 carrot
  • chicken bouillon
  • 1 tbsp. a spoonful of butter
  • 60-80 g noodles
  • chopped parsley
  • salt to taste

Peel the onion, rinse under running cold water, cut into rings. Rinse the parsley, chop, peel the carrots, cut into small slices. Dip all of the listed components into a saucepan with ready-made chicken broth, boil until tender. When the vegetables and herbs are almost ready, put the mushrooms, cut into thin plates and simmer for another 10 minutes.

After the time has elapsed, add pre-boiled noodles to the broth with vegetables and mushrooms.
