Pickled gray rows: recipes for pickling mushrooms

When it comes to preparing the menu for a festive feast, every hostess necessarily includes various snacks in it. The leaders in this category are, of course, pickled mushrooms. They can be placed on the table as an independent snack, or they can be made the main ingredient in delicious salads.

Rows are considered to be very popular mushrooms in our territory. They are processed in various ways, but I would like to separately note the taste of pickled gray rows. This type of fruit body is considered one of the most common; it has a pleasant delicate taste and aroma. But before you get the perfect snack, the rows need to be cleaned of dirt and adhering debris. Then soak them in water for 1 day, constantly changing the liquid, and boil for 30 minutes.

The classic way to marinate gray rows

We suggest that you familiarize yourself with the classic method of pickling a gray row. It is versatile, therefore it suits every taste.

  • Row - 1 kg;
  • Salt - 1 tbsp l .;
  • Sugar - 2 tbsp. l .;
  • Vinegar (9%) - 4 tbsp. l .;
  • Bay leaf - 3 pcs.;
  • Black peppercorns (allspice can be used) - 10 pcs.;
  • Water - 500 ml;
  • Carnation - 3 buds.

Following the step-by-step recipe, the pickled gray row will turn out to be very tasty and aromatic. This is what you need for a real mushroom snack.

We clean or cut off impurities from the fruit bodies, remove the skin from the caps and fill it with water.

After 12-15 hours, rinse them and boil them for 20-30 minutes, regularly removing the foam.

We wash it again with tap water, leave it to drain, and in the meantime we are preparing the brine.

Mix vinegar, pepper, cloves and bay leaves in water, put on fire, bring to a boil, cook for 5-7 minutes.

Put the boiled mushrooms in sterilized jars, fill with strained marinade and roll up the lids.

After cooling, we take it to the basement or leave it in the refrigerator.

How to marinate gray row mushrooms with wine vinegar

Sometimes wine vinegar is used for pickling mushrooms, thanks to which the aroma and taste of the workpiece is revealed from the other side.

In the presence of such a preservative, even a minimal set of spices will emphasize the sophistication of the gray row.

  • Row - 2 kg;
  • Wine vinegar - 250 ml (1 tbsp.);
  • Bay leaves and cloves - 2 pcs.;
  • Onion - 1 pc.;
  • Salt - 2 tsp;
  • Sugar - 1.5 tbsp. l .;
  • Black pepper (peas) - 10 pcs.

How to marinate a gray row with wine vinegar?

  1. They sort out the mushrooms, remove the adhering dirt, as well as the lower part of the legs.
  2. Soak for several hours in salted water, then boil for 30 minutes, drain the broth.

While the fruit bodies are draining, the brine is prepared:

  1. Peel and cut the onion into small cubes and combine with wine vinegar.
  2. Add all the spices, mix, put on low heat and cook for 20 minutes.
  3. Spread the mushrooms and pour in 0.5-1 tbsp. purified or boiled water, boil for another 5 minutes.
  4. The mass is distributed over sterilized jars, rolled up, cooled and taken out to the basement.

Marinating gray rows with citric acid

For pickling mushrooms, including gray rows, you do not need to use vinegar at all. An excellent substitute in this case will be another preservative - citric acid.

  • Row - 2 kg;
  • Water - 3 tbsp.;
  • Citric acid - ½ tsp;
  • Salt and sugar - ½ tbsp each l .;
  • Black pepper (peas) - 13-15 pcs.;
  • Bay leaves, cloves to taste.

How should you marinate gray row mushrooms using citric acid instead of vinegar?

  1. First of all, you should prepare the mushrooms: clean from dirt, rinse in water and boil for 20 minutes (add 1 tbsp. 6% vinegar to 600 ml of water).
  2. Drain the broth, rinse the mushrooms with cold water and leave to drain.
  3. Combine in 3 tbsp.water citric acid, salt, sugar, pepper, bay leaf and cloves, put on fire.
  4. Bring to a boil and simmer for 10 minutes, then strain the marinade.
  5. Put the mushrooms on the fire again, boil for 7-10 minutes.
  6. Distribute the rows together with the marinade in 0.5 liter jars (sterilized).
  7. Cover and place for further sterilization for 20 minutes.
  8. Roll up, allow to cool, take to a cool room.

Spicy Pickled Rows Recipe

The piquancy and pungency of this appetizer will definitely be appreciated by your men. She will also add variety to every family's daily and holiday menu.

  • Row (peeled and boiled) - 2 kg;
  • Water - 800 ml.;
  • Vinegar (9%) - 7 tbsp. l .;
  • Black and allspice - 7 peas each;
  • Bay leaf - 3 pcs.;
  • Salt - 2 tsp;
  • Sugar - 3 tsp;
  • Garlic - 8-10 cloves;
  • Hot pepper - ½-1 pc. (taste).

Pickling for rowing with gray is very simple:

  1. Peel the garlic and chop finely, do the same with the pepper.
  2. Combine all the ingredients in water and simmer for 10 minutes over low heat.
  3. Distribute the boiled mushrooms in sterilized jars and pour over the marinade.
  4. Roll up the lids, let cool and take to the basement.
