Vegetable stew recipes with cabbage, potatoes and mushrooms

Stewed cabbage with potatoes and mushrooms

Ingredients:

  • Cabbage - 1 head of cabbage
  • Potatoes - 5-6 pieces
  • Carrots - 2 pieces
  • Onions - 1 piece
  • Mushrooms - 200-300 grams
  • Ground black pepper to taste
  • Salt to taste
  • Tomato paste - 1-2 tablespoons
  • Purified water (boiled) - 0.5-1 glass

To cook cabbage stewed with mushrooms and potatoes, put a skillet over high heat and heat some vegetable oil in it. Arrange the potato slices and fry until golden brown. Be careful not to turn the contents of the pan until you are certain that a crust has already formed on the underside.

Stew with porcini mushrooms

Ingredients:

  • 100 g dried porcini mushrooms,
  • 300 g sauerkraut,
  • 200 g potatoes
  • 100 g carrots
  • 1 onion
  • 0.5 kg zucchini,
  • 30 g parsley root,
  • 50 g sour cream
  • 2 tablespoons of vegetable oil
  • 1 tablespoon tomato paste
  • 1 tablespoon flour
  • Bay leaf,
  • parsley,
  • ground black pepper,
  • salt.

Cooking method:

Rinse the mushrooms, cover with cold water and leave for 2-3 hours. Then put on fire and boil. Strain the resulting broth, and cut the mushrooms into strips.

Peel the onion, chop and lightly fry in hot vegetable oil. Then add peeled and coarsely grated carrots and parsley root and sauté for 2-3 minutes.

Rinse cabbage, squeeze lightly, put in a pan with vegetables, add mushrooms, tomato paste, bay leaf and simmer. Wash the potatoes, peel, cut into small pieces, put in boiling mushroom broth and cook for 20 minutes. Cut the courgette into small cubes, add to the broth.   • 30 g butter
  • 50 g sour cream
  • ½ lemon,
  • dill and parsley,
  • salt.

Cooking method:

Rinse the mushrooms, cover with cold water and leave for 2-3 hours. Then put on fire and boil, then strain the broth.

Composition: 100 g dried mushrooms, small cabbage forks, 2 potatoes, 1 parsley root, 1 celery root, 1 carrot, 2 onions, 5 tbsp. l. butter, 2 tbsp. l. flour, salt.

Wash the dried mushrooms and put in water for 3-4 hours, then remove the mushrooms and chop them. Strain the water in which they were soaked. Peel and chop the potatoes, chop the cabbage. Peel and chop onions and carrots. You can also grate carrots. Chop parsley and celery roots. In a slow cooker on the "Fry" or "Baking" mode, dissolve the oil and fry the flour in it while stirring until golden brown. If desired, you can add onions and carrots and fry for 10 minutes with the lid open, stirring occasionally. And you can not do frying, but, in a dietary version, cook onions and carrots.
